Gradual reduction system in wheat milling process

Milling is the most common processing technique for wheat grains for human consumption. Roller mill is the primary technology used for milling wheat into flour. The technology is a gradual reduction system so that damage to the components of wheat is minimized during four milling.

The gradual reduction system of flour milling is the process of taking the whole wheat berry and via a series of grinding and sieving stages, producing white flour of the desired quality and yield. This gradual reduction is done to control the level of starch damage.

The gradual reduction system has enabled the production of flours of low ash content and high yield. Specialist, high quality flours are produced by extracting high purity sub-products from within the process.

Many variations in the detail of the process flow sheet emerged in the years after the perfection of the gradual reduction system. This was due to the varying requirements of customers and even political directives.

Wheat cleaning and milling

Before the wheat reaches the milling stage, first it has undergo several preliminary operations that ensure the correct of the main process. The first of these is wheat cleaning.

Wheat is passed through a series of machines that apply the principles of particle size and density separation.

Foreign materials such as metal, sticks, stones, straw, seeds and other grain are removed in steps by a magnetic separator, vibrating screens, a destoner, a disc separator and a scourer.

Sieves remove contaminants larger than wheat kernels as well as finer contaminants such as sand. In addition, air is used to remove plant material that is lighter than the grain.

After cleaning, the wheat is tempered prior to be milled. In this stage, the moisture content of the grain is increased by adding water and by allowing the grain to sit for a period of time.

Wheat is milled to remove the bran and germ and reduce the wheat kernel to flour to be used in various baked and nonbaked goods.
In general, 100 pounds of wheat will produce 72 pounds of flour. The aimed of white flour milling is to extract a maximum amount do endosperm from the wheat berry in as pure a form as possible.

The wheat is passed through a series of machines to break open the wheat kernels and reducing of the endosperm by grinding to obtain the final product – plain flour.

Additives of less than 1 weight % are added to the flour by a mixing process.

Family four for retail sale is packed in 5, 10, or 25 pound bags. Bakery flour may be packed in 50 or 100 pound bags or shipped in bulk trucks or railcars.

Process of wheat cleaning

Most grain are not cleaned either by farmers or by country elevators. Wheat delivered at an elevator is sampled and graded with considerable accuracy and the elevator operator usually makes a price adjustment on the basis of moisture content, test eight, foreign material and damaged or broken kernel.

The mill is the point where cereals are transformed from agricultural commodities to foods or food ingredients.

Wheat cleaning is related to the flour yield and ash content. A great deal of physical cleaning takes place in the mill.

It must be clean of all impurities because impurities increase the ash content of the flour, adversely affect four color, and reduce the flour yield.

The grain must be carefully cleaned and all foreign grains (cereals other than wheat and fodder plants), stones and metallic particles are removed. The cleaning operations separate the impurities and foreign sees by dimension, weight and form.

*disc separator to remove weed seeds and broken grains
*magnetic separator to remove pieces of metal and
*wash and whizzer device where wheat is rapidly sluiced round at high speed in a stream of water to remove dirt.

Wheat harvesting

The common types of wheat grown in the United States are spring wheat, planted in the spring for fall harvest and winter wheat, planted in the fall for spring harvest.

Many years ago, the common method of harvesting grains was the binder, which may possibly still be used on some small farms.

Harvesting wheat refers to the activities performed to obtain the cereal kernels of the plant for grain or the entire plant for forage or silage uses, These activities are accomplished by machines that cut, thresh, screen, clean, bind, pick and shell the crops in the field.

Binders have been replaced nearly everywhere by combines, large and small. These machines cut and thresh the crop and are usually self-propelled. Spring wheat may be windrowed or swathed before threshing.

Harvesting technologies normally remove material larger than the grain such as plant parts and material significantly smaller like sand and dirt.

The grain is stored in the harvest machine while the remainder of the plant is discharged back onto the field.

After combining, most spring and winter is either stored in the farms for a time or promptly taken by truck to local elevators where it is loaded on railway cars and carried to terminal markets.

High protein flour is desirable for some types of baked products, flour of moderate protein content for others, and high starches low protein content flour is desirable for still other baked foods.

The smaller flour particles are higher in proteins; the larger flour particles are higher in starch. Through air classification in a turbomill it is possible to separate flour particles into various size, which can be blended to provide whatever protein or starch content is required by the baker or other users of flour.

Turbomilling developed in the late 1950s, is considered to be significant milling innovation, because only through this process is the variety of blends for different products possible.

In the United States, wheat flour is enriched with the mineral, iron (as a salt). Enrichment with calcium salts is optional for some types of flour but mandatory for enriched, self-rising flour.

Wheat flour is use to make leavened products, such as alimentary pastes (macaroni, spaghetti, noodles, etch. Cake mixes are also prepared with flour, and flour is used for thickening canned and homemade stews, soups gravies and white sauces.

Various breakfast cereal products are made from wheat. Generally, in these products, the wheat is precooked an passed though heated rolls to form flakes.

It may also be shredded, or it may be heated to above the boiling point of water under pressure, with puffed wheat formed when the pressure is released.

Wheat bran may also be produced as flakes. High protein cereals may be produced from wheat together with added wheat starch sugar malt, minerals (such as phosphates), vitamins and other ingredients.

Some wheat flakes are coated with very thin layers of sugar.

Wheat is harvested by combines that cut the stalk remove and collect the seed, and either return the straw to the soil, to be plowed under with the stubble and thus provide hummus or compress and bale it for future use as litter, ensilage and so on.

Wheat may be bagged in jute sack and stored in warehouses or it may be stored in bulk in elevators. The latter method provides the best protection against rodent and insect infestation. The moisture content of bulk stored wheat should not be higher than 14.5% and that of sack stored wheat not higher than 16%. Otherwise, microorganism may grow and cause heating and spoilage. When it is necessary to lower the moisture content of wheat it may be dried in bins by blowing hot air (not higher in temperature than 175 degree F) across the bins.

In preparing wheat for milling, it is blown into hopper scales that record the quantity of uncleaned wheat. Some of the coarser impurities are removed by this process. The grain then passes over a series of coarse and fine sleeves that further remove contaminating materials, including chaff and straw. Still in dry states stones may be removed by passing wheat over short openings that allow the heavier stones to fall out of mass and be trapped.

The wheat is next passed over discs or cylinders containing indented surface that remove seeds short or longer than wheat following a pass through a magnetic separator to remove any metals present. The next cleaning process is dry scouring to remove adhering dirt. The wheat is then washed in water, a process that both removes dirt and adds 2 – 3% water to the grain. The added water is necessary to provide desirable conditions for milling. A stone trap is including in the washer. Excess water is removed by centrifugation. A second wet cleaning with a light brushing action is ordinarily used, followed by aspiration (blowing air through the grain), which is the final cleaning operation. The grain is then carried into a bin from which it is fed to the milling operation. This bin is located on the top floor of the flour mill, the grain having been elevate do this position during the various cleaning operation.

In milling, grain is fed automatically though scale hoppers that regulate the flow of the seeds at rates corresponding to those of the following operations: Milling may be carried out by passing the grain through a series of corrugated rolls rotating toward each other, which remove chunks of the endosperm from the bran. After each passage through the break rolls, the material is sifted through cloth, or wire sieve and separated according to particle size.

The various streams of different sized flour particles are finally blended to provide the different grades of flour. The more finely ground flour is nearer to white but less nutritious than the coarser ground flour. This results from the more effective removal of bran and germ from finely ground flour. Impact milling is now used in some operations. With this method, the seed is broken open by impact in a machine. Flour particles of different sizes are separated by air classification or by centrifugation.
